What does the amylase enzyme do?

It hydrolyses α-1,4 glycosidic bonds in starch and glycogen, producing dextrins, maltose, and maltotriose. In industrial processing, amylase enzyme is a core tool for liquefaction, mash conversion, and starch-to-sugar workflows.

What is the substrate of amylase?

The substrate of amylase is starch, including starch-based slurries from grains and tubers. In practical plant use, substrate composition affects viscosity drop, conversion rate, and final sugar profile.

What is the difference between alpha-amylase and beta-amylase?

Alpha-amylase is endo-acting and cuts internal α-1,4 bonds for rapid viscosity reduction. Beta-amylase is exo-acting and removes maltose units from non-reducing ends. Together they define enzyme behavior in brewing, baking, and syrup production.

Is amylase food grade?

What pH and temperature does amylase need?

Industrial grades operate best at pH 4.5–7.0 and 55–95 °C, depending on source organism and process design. Aspergillus oryzae grades suit mid-range conditions; Bacillus subtilis grades are selected for hotter liquefaction steps.
